Going Bananas!

How can something be so simple and... so good? WOW! I like the idea of frying the bananas before mixing them with the rest ... You can't go wrong here just follow this recipe!

For making your Banana Muffins you need:
  • 120 grams of butter (melted)
  • 10 dl of flour
  • 1 sachet of baking powder
  • ½ teaspoon of bicarbonate 
  • pinch of salt (+ ginger)
  • teaspoon of ground cinnamon
  • teaspoon of ground nutmeg
  • 1,5 dl of sugar (brown or white)
  • teaspoon of vanilla extract
  • teaspoon of honey
  • large bananas
  • medium eggs
  • 2 dl of fat milk


Way to go:
Preparation time app. 15 min 
Cooking time app.25 min
  1. Fry your diced bananas in some butter and cinnamon in a frying pan on the stove
  2. Get out the big bowl and start mixing butter and sugar softly
  3. Add the eggs 
  4. Now it's time for the flour (already preprepared with the baking powder) and then the milk
  5. Add the bicarbonate, salt, cinnamon and nutmeg, vanilla extract, honey ...
  6. Add the bananas to the egg mixture and stir again until smooth (but don't stir too much, its meant to be a bit thick!)
  7. Grease a muffin/cake tin well and fill each space with the adequate amount of mixture
  8. Stick it in the oven for 20-25 minutes at 175°
  9. When it get's a nice golden brown and is not runny in the middle anymore, remove the muffins from oven and let them cool off for 5-10 minutes in the tin and before serving. Time to Go Bananas!

Langouste grillée au beurre d'ail et au citron vert


Quelle bonheur de choisir sa langouste fraiche sur place! En vacances de noël dans les caraïbes, le rêve total ... Préparer par Madame en plein air, devant nous. Le meilleur repas.

Langouste grillée au beurre d'ail et au citron vert
  • Temps de préparation : 15 minutes
  • Temps de cuisson : 7 minutes
  • Ingrédients (pour 2 personnes) :
  • 2 Langoustine entière
  • 250 g de beurre mou
  • 1 cuillère à soupe de persil frais haché
  • 2 échalotes 
  • 2-3 gousses d'ail hachées
  • 2-3 cuillère à soupe de jus de citron vert
  • 1/4 de cuillère à café de sauce Tabasco
  • 2 cuillères à soupe de chapelure
  • sel et poivre

Préparation de la recette :
Préchauffer le four à 200°C.
Préparer les langoustines (nettoyer et rincer) ensuite coupe la carapace en deux sur la longueur et placer les dans un plat destiné aller au four.
Mélanger dans votre saladier le beurre avec le persil, les échalotes, l'ail, le jus de citron vert et ajouter  la sauce Tabasco et de la chapelure. Mélanger bien avec l'assaisonnement de votre choix. Étaler le beurre à l'ail sur la chair des  langoustines. Faire cuire au four pendant 7 min . Servir avec du riz, patates frits et une petite salade.

Turkey Chili with a twist



Recipe: Turkey Chili with a twist
  • 120 gr of fresh Turkey fillet (per person) 
  • 1 big jar of peeled tomatoes
  • 400 gr of red kidney beens
  • 2 large yellow onions (paprika)
  • Garlic cloves
  • Fresh coriander
  • 2 table spoons of chili powder and curry powder (cumin)
  • S & P, Tabasco
  • 3 table spoons of sour cream
  • Olive oil
  • Preparation/cooking time 15-20 minutes
For a feast or anyday of the week ... Pour a little olive oil into your pan, cut the meat in large chunks before frying. Now prepare your onions and the garlic, take out the meat before frying. Add spices and tomatoes and the meat, let it simmer for 10-15 minutes and stir in the sour cream and coriander before serving. Quick, tasty and colourful! Serve with rice, or a warm tortilla. Swallow it down with a cold beer-in-a-bag. EvaBien wishes you a bon appétit!

Poisson cru mariné avec des citron verts et l'huile d'olive

Le poisson "cru" est cuit grace au citron! La cuisine de République Dominicaine, influencée par les espagnoles, indigènes et africaines parfois avec des très fortes similitudes des cuisines des iles avoisinantes comme Cuba et Porto Rico. En République Dominicaine en mange souvent un poisson nommé "mérou" qui peut être remplacé par un poisson de chez nous, exaple dans la recette qui suitRassurez-vous que vous avez des ingrédients frais et sains avamnt commancer cette recette, c'est absolument délicieuse !

Ingrédients (4 personnes):

600 gr de poisson frais (saumon, thon, daurade, turbot, lieu noir, ou cabillaud ....)
3 gousses d'ail
4 échalotes
1 mangue
1 poivron jaune
5 ou 6 citrons verts
une  pincée de piment 
2 cuil à soupe d'huile d'olive
du persil

Préparation:


Préparez et nettoyer votre poisson de choix, découpez en petits dés. Hachez l'ail et les échalotes et mélangez-les avec les dés de poisson et les autres des ingrédients (l'huile d'olive, fruit et legumes). Pressez le jus des citrons verts et en arrosez les poissons. Salez, poivrez et pimenter ensuite laissez tout au frais pendant 6 heures. Présenter dans des "Cuillère Céramique" bien blanc, bien jolie accompagné d'une coupe de champagne ... Elle est pas belle la vie?

First time in my life on an "All included" holiday, no cooking for two weeks ... Must say that the Caribbean food style is more than enjoyable with all these beautiful coulours and aromas ... What can be more satisfaying than having fresh mango, passion fruit and mango for breakfast? No wonder these people wake up with a smile on their face, everything is sweet and colorful thanks to the sun.

Back in business with Caribbean X-mas Buffet!




I just came back from the best vacation, ever ...! A bit strange to dismiss x-mas and not celebrate in the traditional way but, enjoyable for a change. No swedish herring dishes or french oysters but colourful sweet pastries (and lot's of other things). I can assure you that it looks better than it tastes but ... A lot of fun, and only one time of the year so, be my guest!
